Chia seeds are like magical little beauty pills wrapped up in one crunchy, you'll-need-floss-afterwards tiny package. The benefits of them are endless (which you can read more about here) - but after trying them in my smoothies a few times I couldn't get on board with the jelly-like texture it turned it into, so I played around with chia seed pudding and have found that's the best way for me to get these powerful little nuggets into my diet.
1 c milk (I used coconut milk) + 3 T chia seeds + dash of honey and cinnamon to taste. Add cacao for a chocolate version. Mix all together and pop in the fridge for a couple hours until it's thick like...pudding! Enjoy plain or topped with fruit, granola, chopped nuts.
