Around the corner from my New York office is a great little bakery / deli called Smile. They have yummy salads and killer giant salted chocolate chip cookies, but what I love the most there is their banana bread. I find most bakery banana breads to be to dry, unhealthy, and not all that tasty, but this one has the biggest chunks of banana, sweet maple flavor, and the perfect chewy top.
After first trying Smile's banana bread over a year ago, I set out on a mission to replicate as best I could. After finding this recipe, I've nailed it as close as it's gonna get! It's super healthy made with oat flour instead of white flour (just take regular oats and throw in your food processor), maple syrup instead of sugar, coconut oil which makes it super moist, and 4 whole bananas which makes it super sweet. I've made it before omitting the greek yogurt and it turns out really just about the same. To make it extra pretty I add some sliced bananas on top with a drizzle of maple syrup or honey.
